In 1952, Earl Fayard Sr. opened the doors of the Ocean Springs Seafood market in Ocean Springs, Mississippi. The market provided an avenue for Earl and other fisherman to sell their delicious catch to the locals. Local restaurants started buying their shrimp from Ocean Springs Seafood and when Earl Fayard, Jr took over the business in 1968, he put his eye on national distribution. By 1976 Earl Jr. had a full-scale shrimp processing facility along with the local seafood market. He continued to grow his business until 2005 when Hurricane Katrina leveled the factory and the market to the foundation. Earl Jr. and his daughter, Bethany, now process at a factory on Biloxi Bay.
